Appetizer — Shrimp Cocktail with Pineapple Salsa
There is no more festive way to welcome guests to a coastal table than a stunning shrimp cocktail — and this one earns the extra admiration it will receive. Plump, chilled shrimp arranged around a bowl of bright pineapple salsa brings a tropical sweetness to the classic that feels exactly right for summer. Serve it on your most beautiful platter and let it be the first thing guests see when they arrive. The combination of cold shrimp and sweet, tangy salsa disappears faster than you expect every single time.
Shrimp Cocktail with Pineapple Salsa
Serves 6–8
For the shrimp:
•2 pounds large shrimp, peeled, deveined, and cooked
•Ice, for chilling
For the pineapple salsa:
•1 cup fresh pineapple, finely diced
•1/2 red bell pepper, finely diced
•1/4 red onion, finely diced
•1 jalapeño, seeded and minced
•Juice of 1 lime
•2 tablespoons fresh cilantro, chopped
•Salt to taste
Combine all salsa ingredients in a bowl and stir to combine. Season with salt and adjust lime juice to taste. Refrigerate at least 30 minutes before serving. Arrange chilled shrimp around the edge of your serving platter or bowl, fill the center with pineapple salsa, and serve immediately.
Main Course — Honey Mustard Glazed Salmon with Mixed Vegetables
The centerpiece of the evening: beautiful salmon fillets brushed generously with Stonewall Kitchen’s Honey Mustard, finished with a golden panko crust, and served alongside a roasted medley of summer vegetables. The mustard does something remarkable here — it brings a bright, tangy depth to the salmon that makes every bite feel considered and complex, even though the preparation is straightforward enough for any weeknight. This recipe is adapted from Stonewall Kitchen’s Mustard Crusted Salmon Filets, using their Honey Mustard in place of the Basil Pesto Mustard for a sweeter, more coastal-friendly glaze.
Honey Mustard Glazed Salmon with Mixed Vegetables
Serves 4
For the salmon:
•4 (6-ounce) salmon fillets
•3 tablespoons Stonewall Kitchen Honey Mustard
•Salt and pepper
•3 tablespoons olive oil, divided
•1/2 cup panko bread crumbs
•2 tablespoons fresh parsley, chopped
•1 teaspoon fresh lemon zest
•1/4 teaspoon paprika
•1/4 teaspoon salt
For the mixed vegetables:
•2 cups asparagus, trimmed and cut into 2-inch pieces
•1 cup cherry tomatoes, halved
•1 zucchini, sliced into half-moons
•2 tablespoons olive oil
•Salt, pepper, and fresh thyme to taste
Preheat oven to 425°F. Toss vegetables in olive oil, salt, pepper, and thyme. Spread on a sheet pan and roast for 15–20 minutes, until tender and lightly caramelized.
Meanwhile, place salmon fillets on a work surface skin side down. Brush tops generously with Stonewall Kitchen Honey Mustard. Season with salt and pepper. Combine 1 tablespoon olive oil, panko bread crumbs, parsley, lemon zest, paprika, and salt in a bowl. Toss to combine. Top each fillet with the bread crumb mixture, pressing firmly so it adheres.
Heat 2 tablespoons olive oil in an ovenproof skillet over medium heat. When hot, add salmon fillets skin side down and sear for 2–3 minutes. Transfer skillet to the oven and finish for 5–7 minutes until crumbs are golden and fish is flaky. Rest 5 minutes before serving alongside the roasted vegetables.
Dessert — Chocolate Sea Salt Truffles
The dessert that makes the whole table gasp just a little when you bring it out. These truffles — golden cookie crumbles, silky cream cheese, and Stonewall Kitchen Sea Salt Caramel Sauce all rolled into perfect little bites and enrobed in white chocolate — are indulgent and elegant and entirely make-ahead friendly. That last part matters. Make them the night before, refrigerate overnight, and bring them out at the end of the evening looking like you spent far more effort than you did. They disappear before the coffee is finished.

Chocolate Sea Salt Truffles
Makes 18 truffles
•18 golden crème filled sandwich cookies
•2 ounces cream cheese, softened
•2 ounces Stonewall Kitchen Sea Salt Caramel Sauce
•8 ounces good quality white chocolate
•1 tablespoon flaked sea salt
Place cookies in a food processor and pulse until they reach a fine, sand-like consistency. Set aside 2 tablespoons of the crumbled cookies. In the bowl of an electric mixer, beat the cream cheese until smooth. Add the Stonewall Kitchen Sea Salt Caramel Sauce and beat until well combined. Add the cookies and mix on the lowest setting until the mixture comes together.
Using a small scoop, portion out 1 to 1½ inch balls and roll between your hands to form truffles. Place on a parchment-lined baking sheet and refrigerate for at least one hour.
Mix together the reserved cookie crumbles and flaked sea salt in a small bowl. Once the truffles have firmed, melt the white chocolate in a microwave-safe bowl. Dip each truffle until fully enrobed, return to the parchment-lined pan, and sprinkle immediately with the cookie and sea salt mixture. Refrigerate until ready to serve.
